We’re celebrating a Canadian staple first served in Canada in Drummondville, Quebec. (Can you name the restaurant? It’s in our list, but no peeking yet!) That’s right, the poutine!

Named to be close to the word pudding, this dish of fries, gravy and squeaky cheese curds may be made around the world now, and under funky names like Disco Fries, but anyone who’s ever lived a red plaid, toque-topped Canadian winter complete with a chesterfield and a hockey stick knows this dish is truly ours.

We’re still waiting for the day someone figures out how to integrate ketchup chips.

Le Roy Jucep (Drummondville, QC)

The trademarked “Inventor of Poutine,” Le Roy Jucep was founded by Jean-Paul Roy who first started serving fries and a “special sauce” in the 1950’s. Taking over Orange Jucep, a Boulevard Saint-Joseph Dairy Bar, Roy continued plating his otherwise nameless “cheese, potatoes, sauce” menu selection, eventually abbreviating it to poutine, to be similar to pudding.

Roy also had a cook known as Ti-Pout, further guiding the final pronunciation and spelling of the name.
